You MUST try my Ultimate Chocolate Chip Cookie recipe. I used everything I knew about chocolate chip cookies to make the best recipe possible, and they are indeed the best. It’s my greatest achievement in life, honestly. Just try them and you’ll believe me.

I’m a self-taught decorator, and I think that helps me to think outside the box. I don’t worry as much about the right way to do something and focus on what works for me. It’s really helped me hone my own style and feel comfortable with my caking process.

Always look for creative ways to use leftovers. When I finish a caking project, I always refrigerate or freeze the leftover cakes and buttercream, so that if I’m going to an event or party, I can always pull them out and create a new dessert. A mini mega cake or petit fours are my go to. Even though it might not be sculpted into a Shark Cake, it still tastes just as delicious and people really appreciate that.

My Key Lime Mega Cake I honestly think it’s an easy recipe with not that many components and anyone can make it. It’s rich but it’s balanced out with such a nice tartness that it never feels overly sweet.

My blog is unique in that it’s so specific to me, and whatever my particular craving is on the day. One moment it’s a cookie-covered cake, and the next it’s a breakfast burger with a soft, oozing egg on it. There are no rules when it comes to my kitchen and my blog, and I think that freedom and fun is what keeps it interesting!

I have three kitchen tips that I like to give to my friends:

1. As Julia Childs said, never apologize. If you make a mistake, just don’t mention it and likely no one will notice.

The must-try recipe from my blog is my Brownie Cake with Rose Persian Fairy Floss! It’s delicious, so easy to make, and so much fun. Eat it after dinner, or at a picnic, or in the middle of the night. It’s rich and gooey and super-chocolatey and the fairy floss adds whimsy and fun with almost no effort.

One of the comments I get most often on my blog is that my readers really enjoy my writing style and sense of humor. I love helping people with their baking and cake decorating, but I also want them to have fun doing it, so I write my tutorials and recipes as though I’m standing next to my readers, in their kitchen, helping them with their creations. And I’m more than happy to make fun of myself and describe it in brutally amusing detail when I mess something up.

If you see a recipe or cake style that you’d love to try, just give it a go. Don’t be intimidated and think that you’ll never be good enough, no one becomes good at something without trying – clichéd but true! And don’t be ashamed if you fail, you can have a cry and throw frosting at the wall, but make sure you laugh about it afterward. After all, it’s just food.

My gluten free cake recipes are incredibly popular, but my Three Ingredient Chocolate Mousse is a must try – it’s a super simple way to get a rich and fluffy chocolate fix.

I have a unique take on desserts, specifically various kinds of cakes. I like to take traditional desserts and turn them around into cakes. I’m also a fan of beautiful cakes, but keeping it simple as far as decorating is concerned.

One of my recent favorites is my Oreo Brookie Cake. It combines so many great things into one cake and even though it’s totally over the top, it manages to be so good you can’t help but take another bite!
