4 Quick and Easy Desserts for Every Occasion

We don’t always have time to dress up, prepare an exquisite dinner and make a particularly sophisticated cake to serve our guests. But don’t worry! Just take your time, relax and make yourself beautiful before the evening starts – you will prepare a delicious dessert anyway. Check out these 4 quick and easy desserts for every occasion which will enchant everyone.

1. Gingered Apples With Ice Cream

Ingredients:

  • 4 medium size apples
  • ¼ cup dark rum
  • 1 teaspoon ground ginger
  • 8 tablespoons chopped walnuts
  • 16 tablespoons vanilla ice cream

Preheat oven to 350F (180C). Wash apples and peel them. Remove stems and cut them in halves, then scoop out the seeds and fibrous flakes with a small spoon. Cover a baking pan with parchment paper to prevent sticking and place apples inside. Bake them uncovered for 30 minutes, or until soft.

Mix rum with ginger and pour over hot, baked apples. 5 minutes before serving put 4 tablespoons of vanilla ice cream on top of each apple and garnish with chopped walnuts.

2. Pears in Wine Sauce

Ingredients:

  • 4 medium size pears
  • 1 cup sweet red wine
  • 1 cup water
  • 1/3 cup sugar
  • 3 inch cinnamon stick
  • 1 1/2 tablespoon freshly squeezed lemon juice
  • 5 whole cloves
  • 8 tablespoons chopped nuts

Preheat oven to 350F (180C). Wash pears, remove stems and cut them in half lengthwise. Spoon out the seeds and the fibrous flakes that surround them. Cover a baking pan with parchment paper and place pears inside. Bake for 15 minutes until pears are tender but not mushy or broken.

In the meantime, put wine, water, sugar, lemon juice, cinnamon sticks and cloves in a small saucepan. Bring to a boil over a low fire and continue simmering until reduced by half. Remove spices and pour the liquid over hot pears. Garnish with chopped nuts. Refrigerate for 3 hours and once in a while sprinkle pears with wine liquid from the bottom of the pan. Before serving add some more chopped nuts on top of each pear.

3. Banana and Orange Slices With Chocolate Glaze

Ingredients:

  • 2 bananas
  • 2 oranges
  • 5.3 ounces (150 grams) unsweetened chocolate
  • 6 tablespoons butter
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 2 ½ tablespoons hot water
  • 2 tablespoons corn syrup
  • 5 tablespoons finely chopped walnuts

Peel bananas and oranges. Cut bananas into 1/3 inch horizontal pieces. Cut oranges in half and slice them into thin half-moon shapes.

Prepare the chocolate glaze. Put chocolate, butter and corn syrup in a small saucepan and heat over a very low fire until melted. Remove from heat and add sugar and vanilla. Stir well, slowly adding water until glaze becomes creamy. Dip banana and orange slices into the chocolate glaze and place them on a plate covered with parchment paper. Allow the chocolate glaze to cool and harden. Arrange fruit slices on a tray, refrigerate for 30 minutes, and serve!

4. Ice Cream Squares With Caramel Walnut and Granola Topping

Ingredients:

  • 2 cups vanilla ice cream
  • 2 cups chocolate ice cream
  • 2 cups granola
  • 2 cups chopped walnuts
  • 1/3 cup caramel ice cream topping

Leave chocolate and vanilla ice cream at the room temperature for about an hour or until they become soft and half melted. Mix granola and walnuts and sprinkle 1 cup of this mixture over the bottom of a baking pan, then drizzle evenly with caramel topping. Spread chocolate ice cream on top of it and freeze for 10 minutes. Take out and now spread vanilla ice cream on top of chocolate. Sprinkle with remaining walnuts and granola and freeze again. Serve with caramel topping.
