Every once in a while we should all try something new. So, I’m thinking, why not new food? I kind of get bored with eating the same food all over again, even if it’s something I really like, such as pancakes! This is why I came up with some new recipes for pancakes and I’m sharing my ideas with you.

1. Blueberry Pancakes with Forest Fruit Topping

Blueberry pancakes are not anything new. They are a delicious classic, but if you add the forest fruit topping on them, they will become an even more delicious pancake breakfast idea.

Mix the regular pancake dough and have some blueberries ready. I would suggest that you don’t add the blueberries into the dough directly because you may end up with purple pancakes in the end. It doesn’t spoil the taste at all, just the appearance. Instead, take a ladle of dough, pour it on a pan and add the blueberries directly over it. Bake until almost ready from that side and turn over for 20-30 seconds to bake at a side with blueberries because they get bitter if burnt.

To prepare the topping, take a cup of frozen forest fruits, ½ cup of water and ½ cup of sugar. Bring everything to boil in a pot, and cook until the liquid reduces and you get a thick, syrup – like topping. Pour it over the blueberry pancakes and enjoy a perfect breakfast.

2. Bacon and Cream Cheese

I love pancakes with crispy bacon, but I always felt like there was something missing in this recipe. I always wanted something little sour in the mix, to make it all fresher. And then it came to me: cream cheese!

For this recipe you will need all the usual ingredients for pancake dough – so eggs, oil or melted butter, milk, water, flour, baking powder and a pinch of salt and sugar. And then, the magic comes when you bring some cream cheese into the mix. My favorite is Philadelphia soft cream cheese, but you can, of course, put whichever you like the most. Just mix the cheese together with the rest of the ingredients for the dough and bake the pancakes. If you add some chives, it will even taste better.

Make crispy bacon on a grill, with no fat added and serve your pancakes with the bacon and some cottage cheese. They are delicious. Use turkey bacon for a lower fat variation.

3. Pancakes with Seeds

I always feel guilty when eating pancakes because I can’t really think of them as a healthy meal. But then, I came up with the idea to make them healthier, so here is the recipe for pancakes with various seeds.

To make them even healthier replace the butter in the recipe with olive oil and a part of the regular flour with the wholegrain flour – let’s say 2/3 wholegrain and 1/3 regular. Take a handful of seeds you like. I prefer the mixture of pumpkin, sesame and flax seeds with the addition of pignoli. Mix the seeds in the dough and bake the pancakes.

Great thing about these pancakes is that you can eat them as both sweet and salty. For salty, serve with some cream cheese and for sweet with maple syrup of some kind of fruit topping.

4. Banana and Chocolate Chips Pancakes

Instead of making the regular chocolate chips pancakes, you can try this variation: banana and chocolate chips. Bear in mind that they will be richer in calories but they are so sinfully delicious.

To make them take one or two bananas, depending on the amount of pancakes you are making, and mash them with a fork. Mix this banana paste with the pancake dough, add chocolate chips and bake the pancakes.

Make yourself a cup of coffee and serve your pancakes with banana ice cream. You will absolutely love it.

5. Pancakes with Dried Fruits

This is another healthy type of pancakes. Same as in the recipe for pancakes with seeds, if you mix wholegrain and regular flour, they will be even healthier.

Take a handful of dried fruits – apricots, dates, cranberries, raisins, figs and apples. Make sure none of them are extra sweetened. Chop finely all the fruits and add them into the pancake mixture and bake the pancakes.

Serve the pancakes with a large glass of freshly squeezed orange juice and enjoy in perfect pancakes for your breakfast.

Add cinnamon and brown sugar to your pancake batter. Top with cream cheese frosting, a sprinkle of cinnamon, and a drizzle of maple syrup.

These are just a few new pancake breakfast ideas to get you started. You can also experiment with different fruits, nuts, and spices to create your own unique pancake recipes.
