3 Old Fashioned Italian Sandwiches

We will call them Tricolour sandwiches because they’ll be arranged to look like Italian flag. The recipe is for four persons, but you can change the quantity depending on how hungry you and your friends are. Friends are coming over to play cards or monopoly and you want to surprise them with something creative from European cuisine? Here is a recipe for 3 tasty and easy-to prepare old fashioned Italian sandwiches

1. Green Sandwiches

Italian panini sandwich with ham

  • 4 slices of toast or focaccia (traditional Italian bread)
  • 4 pieces of prosciutto
  • 2 handfuls of rocket (arugula)
  • 4 thin slices of mascarpone cheese
  • little bit of olive oil
  • black olives

Drizzle or spray every slice of bread with little bit of olive oil. Place one slice of cheese on every piece of bread and then layer the prosciutto. Top every piece with rocket and spray olive oil again. Rocket is often used in Italian cuisine, and it goes great with prosciutto.

2. White Sandwich

  • 4 slices of toast or focaccia
  • 4 slices of smoked turkey
  • 4 slices of mozzarella cheese
  • 4 thin slices of red onion
  • little bit of olive oil
  • oregano
  • pepper

Drizzle or spray every slice of bread with little bit of olive oil, add a pinch of oregano and pepper and round-shaped thin slices of red onion. Place a slice of smoked turkey on every piece of bread and top with mozzarella cheese.

3. Pomodoro (Tomato) Sandwich

  • 4 slices of toast or focaccia
  • 2 medium fresh tomatoes (or 8 cherry tomatoes if you prefer)
  • 2 cloves garlic chopped
  • 4 slices of soft provolone cheese
  • olive oil
  • dried basil (or fresh if you have some)

Place a slice of provolone cheese on every piece of bread, add some olive oil, a pinch of dried basil (or a little of chopped fresh one) and a pinch of chopped garlic. Add some salt if you want. Top every piece with sliced tomatoes. This is an excellent, vegetarian bite.

Now, arrange these old fashioned Italian sandwiches in following order: green at the bottom of the plate, than white and than red at the top. Place green, white and red paper napkins under every plate. Cool down a bottle of nice white wine. And don’t forget a finishing touch: put a wide smile and play Eros Ramazzotti’s CD. “Que bella notte” can begin.
