4 Great Salad Ideas for Lunch

Girls are always trying to eat light. We all want great bodies and good health, so we try to eat as healthy as possible, especially when summer is coming. On the other hand, we can’t always eat steamed vegetables and similar stuff that we are advised to eat. If you still want a healthy lunch, but a little more different, check out these 4 great salad ideas for lunch.

1. Chicken Salad

It’s the most popular, it’s quite loved and it’s really tasty – it’s the famous chicken salad. There are numerous ways to make it, but every variation contains two main ingredients – chicken and vegetables. Here’s my favorite recipe for a chicken salad.

Grill 150gr of chicken breasts on a grill. Season them as you like. Leave to cool and prepare the vegetables in the meantime. I usually take iceberg lettuce, tomatoes, cucumber, carrot and sweet corn. Chop all the vegetables and the meat to bite size pieces and if you like, add some croutons.

The trick to every tasty salad is of course the dressing. You can make it in so many different ways, from simple olive oil and balsamic vinegar, to more complicated yoghurt, mustard and roasted sesame seeds. My personal favorite is a yoghurt dressing I make by mixing low fat yoghurt with 2-3 tablespoons of Mautner Markhof yoghurt dressing with Italian herbs, but anything you like will do just fine.

For extra taste try adding one chopped green apple into your salad. I got a salad like this in a restaurant once and since then I’m making my chicken salad with green apples. It gives a kind of a sweet taste, but not too sweet, so it goes perfectly with all the other ingredients.

2. Beef Salad

In case chicken salad is not enough for your lunch, you can try making beef salad instead. It’s a bit stronger and richer in calories, but it tastes amazing.

Grill or fry beef meat and chop it in bite size pieces. Now, you can make your beef salad with fresh vegetables, but I think it is perfect with grilled vegetables. Grill some zucchinis, peppers, red onion and tomatoes, mix them with the beef and sprinkle all with salt and just a little bit of olive oil.

This is more like a real lunch than a salad so it’s perfect if you like your lunch stronger but still healthy. You can also add cooked wheat or lentils into this salad. You don’t need a dressing for it, just salt and pepper and some olive oil. I\t’s best if served warm.

3. Vitamin Salad

Whenever you want a healthy meal that will pack you up with vitamins, try making this salad. It’s not just tasty, it’s also a perfect way to make yourself eat beets. A lot of people, including me, hate beets. On the other hand, it’s very healthy and we should eat it, so this idea for salad is a perfect way to get some beets into your system.

To make this salad you will need: 1 medium size beets, 1 green apple, 1 small red onion, 1 carrot, 1 cooked potato, 1 boiled egg, 50gr of yellow cheese and 50gr of ham. Grind all the vegetables apart from onion. Cut the onion into thin slices. Cut the ham, the egg and the cheese into small cubes and mix everything together. Add a pinch of salt and 1 tablespoon of vinegar.

A great idea is to add some seeds into this salad. Take a handful of mixed pumpkin, sesame and flax seeds, even some pignoli and add them into the salad. You will love it.

4. Tuna Macaroni Salad

One of my personal favorite ideas for a salad lunch is a tuna and macaroni salad. It could also be made with salmon or shrimps instead of tuna, depending on your preferences and your budget.

To make this tasty salad you will need: 1 can of tuna strained from oil, some leek, 1 bell pepper, 1 big tomato, black and green olives, 2-3 radishes and 100gr of cooked macaroni or the pasta you prefer. Chop all the vegetables as you like and mix them with the tuna. Add salt and pepper, mix with the macaroni and add 1 tablespoon of olive oil. Mix everything together and add juice from 1 lemon. You can also use orange instead of lemon juice if you’re into a little different taste.
