1. Vegetable Soup

We all know that a soup is a great start for your meal. It can be very low in calories, very healthy and it will take up some space in your stomach, so you’ll eat less of the main course and dessert. Chicken soup tastes the best, of course, but it’s not the only one that’s good. Check out this recipe.

Take all sorts of different vegetables you have at home – broccoli, carrots, potatoes, parsley root, celery, maybe even tomatoes and put it all in a large pot with water to boil. Once the vegetables are softened, take a hand blender and blend it all together until you get a nice creamy soup. Now you only need a pinch of salt, and voila – a perfectly healthy and tasty vegetable soup. Moreover, it’s a great way to make your kids eat some vegetables.

You can also add some sour cream into this soup, just remember it will add more calories.

2. Vegetable Fritters

Similar to making a vegetable soup, you can make delicious vegetable fritters of pretty much any kind of vegetables you have at home. I usually use zucchinis, carrots and potatoes, but you could add eggplant or any other vegetable that tolerates cooking and doesn’t have much water – so, it’s best to avoid cucumbers and tomatoes for example.

Grind all the vegetables and strain them from excess water. If you’re using potatoes make sure to finely grind them because they can’t be eaten raw. Add 1-2 eggs, depending on the amount you’re preparing, pinch of salt and pepper and some flour or breadcrumbs, until you get a mass that doesn’t stick to your hands.

Divide the mass into 4 or 8 equal parts and make vegetable burgers. You can fry the fritters in oil, or grill them or bake them in the oven for a healthier meal. They are very tasty and perfect if served with some type of yoghurt dip.

3. Fish

Any type of fish is healthy for you and you should eat it at least once a week. Fish is the only source of omega 3 acids that are essential for your health and your immune system. Whichever type of fish you choose to cook, you won’t be wrong, but I’ll give you two of my favorite fish recipes.

First is for salmon and I believe that it tastes the best if grilled with a hint of olive oil and some salt. That’s all. No special spices or marinades, just salmon, some salt and some olive oil. 5 minutes on a grill will do just fine, and you have a perfectly healthy and amazingly tasty meal. Serve with some fresh vegetables and that’s it.

If you don’t like salmon, you can try trout. I squeeze some lemon juice over it, add some salt and put a couple of garlic cloves. Put everything in an oven dish and cook in the oven. It needs only 15 -20 minutes and it tastes fantastic. For an extra advice – if you don’t want your kitchen to smell like fish, add one sliced apple in the same oven dish, because it absorbs the smell of the fish.

4. Risottos

Risottos are a good choice for healthy food that tastes good. If you use brown rice instead of white it will be even better and tastier. You can make only a vegetable risotto, or vegetable and chicken, or seafood risotto.

You need rice and vegetables and optionally chicken meat or some seafood. Fry the vegetables first and then pour water or vegetable soup over and add the rice. For a healthier meal, void pouring wine in your risotto. Add the meat and leave everything to cook until the rice is done, and that’s it. You can also choose to add the vegetables last, if you would like them to stay fresher. This is a complete, healthy and tasty meal.

5. Lemon Chicken

You always hear how you should best choose chicken or turkey meat for a healthy diet. Yet you’ve just had it enough with grilled chicken breasts and you want something that tastes a little different and tasty. Try lemon chicken. You can even prepare the whole chicken like this, or just chicken legs or chicken breasts, whichever you like best.

Squeeze some lemon over every piece of meat, sprinkle with salt and pepper, add some garlic cloves and some vegetables in an oven dish and bake everything in oven until the meat is golden brown. This is a basic recipe and you can upgrade it however you like. In any case lemon chicken tastes great and is a healthy idea for a lunch.
