There is no better soup in the world than a chicken soup. It is what makes you feel warm when it’s cold, it is what makes you feel better when you’re sick, and it is also a great first course if you are preparing a special meal.
1. Chicken Soup
This is the standard chicken soup recipe, the one your mom made for you when you were a kid. It is easy to prepare, everybody likes it and it is very good for you. You need: 1 whole chicken (or the same weight of chicken legs, since it is important to cook the meat with bones for soup), 1 onion, 2 carrots, 1 parsley root, 1 bay leaf, 150gr. of thin noodles, salt, pepper. Wash the chicken thoroughly, place it in a larger bowl and pour 3 liters of water over it. Cook on medium fire for about 1 hour. Chop carrot and parsley root and add to the soup. Slice the onion into quarters and add them. Add some salt and pepper and cook for another hour. When done, leave it to rest a while, then strain and add the noodles. Delicious!
2. Chicken Soup with Mushrooms
This is a tasty variation of a standard chicken soup recipe. If you are bored with plain chicken soup, try adding mushrooms to the recipe. You’ll need: 1 chicken, 2 carrots, 1 celery, 1 parsley root, 100gr. of champignons, 1 bell pepper, 1 tomato and parsley leaves. Wash and cut the chicken, place it in a large bowl and poor water over it. Cook for about one hour and then add chopped carrots, celery, parsley and champignons. Cook for another hour and then add bell pepper sliced in halves tomato sliced in quarters. Cook for another then minutes and then remove bell pepper, tomato and meat from the soup. Cut the meat into little pieces and put back in the soup. Add pepper and sprinkle with chopped parsley leaves.
3. Italian Chicken Soup
Chicken soup is famous and loved all over the world. And since the Italians are bringing some of the best tasting dishes out there, no wonder they’ll have their own recipe for a chicken soup. If you want to prepare Italian chicken soup, you’ll need: 0.5kg of chicken meat, 1 onion, 1 leek, 1 celery, 1kg tomatoes, 2 cloves, 2 eggs, parsley leaves, 50gr. parmesan.
Debone the meat and cut it into small pieces. Put it in the water and cook for about half an hour. Add cut onion, leek, tomatoes and cloves and cook altogether until the vegetables soften. Beat the eggs together and pour some soup over them, in order to heat them a little before you put them in the soup, because you don’t want scrambled eggs in your soup. Pour the eggs into the soup, put salt, pepper and spices you like and serve every plate of soup with ground parmesan and chopped parsley leaves.
