No drama needed in the plant based kitchen. Most days my meals take 5-10 minutes to throw together. If we focus on fresh, whole food ingredients the rest will take care of itself. Pinky swear.

Oh and learn how to water fry (frying without oil and using water instead)! This will have a powerful impact on your overall health!

Last year I ended a very long and significant relationship and it sort of tore me apart and I was very open about it (respectfully to my former partner of course).

If you are making the switch to a whole food, vegan diet, start slow. I didn’t change my pantry overnight. I bought 1-2 new ingredients a week and slowly built it up.

You will get there eventually. I also believe in wiggle room. Diets do not have to be rigid. I follow the 90/10 rule. Eat clean 90% of the time, but allow 10% of “cheat” meals. After all, you gotta live sometime!

My Vegan Lucky Charms recipe with homemade aquafaba marshmallows was a huge hit! “Aquafaba” is the cooking liquid from a can of chickpeas, or any other type of bean, you know, something people usually pour down the drain!

If you whip up aquafaba in a stand mixer with cream of tartar and sugar, it creates a magical vegan-friendly meringue that can be used the same way as egg-based meringue.

Since meringue previously did not have a stable, practical vegan version, chefs all over the world have been creating vegan versions of meringue recipes, and innovative new recipes.

When I made meringue cookies for the first time, they reminded me of Lucky Charms marshmallows, so I decided to try making them with aquafaba.

It worked well, and resulted in a vegan version of Lucky Charms! The tiny meringue marshmallows are piped from a pastry bag one by one, so make sure you set aside enough time to make them.

A must try recipe on my blog would have to be my Date-Sweetened Banana Bread. It is my most popular recipe and has got to be one of my all time favorites!

There’s always a sense of comfort that comes along with enjoying thick a slice of banana bread and a tall glass of {non-dairy} milk. It’s to me like sitting in front of a warm fire on a cold winter’s night (if you would even consider there to be a ‘winter’ here in LA).

The problem with most other banana bread recipes is that they contain dairy, eggs, refined sugar, and oil — things that I do not consume or include in what I consider a healthy diet.

So, I decided not only to veganize this nostalgic recipe, but to also be sure it is a healthy version that I could guiltlessly consume and enjoy. I created a healthy banana bread that is vegan, gluten-free, refined sugar-free, oil-free and yet still comforting & delicious.

The ingredient list on this recipe is also relatively simple, I promise!

2. What is that “special touch” what makes your blog/work different/unique/authentic?

I think my recipes are appealing because they’re simple, quick, easy to make and taste great. I use ingredients people recognize. My food photography probably does a good job of drawing folks in and then when they realize that this yummy-looking grub is healthy AND vegan, they’re stoked.

I’ve heard from several people that my no-pressure approach to veganism is attractive as well; I try to be as inclusive and welcoming as possible.

Take your water game to the next level! Infuse it with grated ginger and lemon juice, berries, apple cider vinegar, spirulina powder, or other colourful super foods that make it special and more nutritious.

My special touch is the out right honesty that I write with on my blog. I don’t sugar coat things, I don’t say that something is the best recipe on this planet – because who on earth knows what the best recipe on the planet is?

Everything I have to say is real, straight forward and perhaps sometimes a little cheeky an inappropriate ;-)

If you are trying to go vegan, start slow. A lot of people go “cold turkey” pun intended, but I suggest slowly and gradual swapping out meat for tofu, dairy products for soy/almond products etc.

Let your mind and body get used to the change and you won’t fall off the bandwagon. It’s a Lifestyle, not a Diet.

2. What is that “special touch” what makes your blog/work different/unique/authentic?

I make my food from scratch, using fresh seasonal vegetables and fruit, home ground and sprouted flours, nut butters, plant milk, whole spices and fresh herbs.

My work in the kitchen is largely influenced by my Russian background, which helps shape my approach to food in terms of flavor, but mostly in terms of the style/form/shape of my dishes. I think quite a bit about color too, and live by the wisdom that the more color there is on our plate, the healthier the meal.

New and uncommon whole food combinations are most inspiring to me and quite frequent in our blog posts. For example, I often take spices and herbs that are mostly used in savory dishes, and include them in my desserts.

3. Exclusive tip, how to or recommendation for YouQueen readers?

When it comes to whole food based and vegan meals, maximizing flavor means striving to incorporate vegetables and fruits that are at the peak of their season.

Seasonal produce is cheaper because it is in abundance and sun-fed, so therefore more flavorful. Use plenty of fresh herbs and freshly ground spices, and keep in mind that a squeeze of citrus juice can add a necessary final touch and help bring forward all the flavor of your dish.
